Trouble is, I'm used to sketching on paper, and I tend to rotate the paper around so that I get a good angle for each pen stroke - how do you do that with a tablet? It's a bit cumbersome to rotate....

is why you want corel painter. It is the artists dream, you can rotate the canvas just like you would paper so your tablet remains as is but you can have your strokes going in the direction you want.
Corel Painter X is the single best graphics package I ever bought. And I bought most of them.

The old ones before built in kitchens became the norm.

You can have a free standing base unit with a counter top sympathetic to your kitchen and put an inset into that. I'll design you one if you phot the kitchen. Then you can put an ultra clean and functional basin into that.

having worked in all stainless kitechens ans seeing this type of thing this might be a good starting point.

with stainless always remember to get a good gauge of steel, cheaper sinks tent to have a lesser/thinner gauge of steel and in my opinion area false economy.
