Top tip for cheese on toats with bacons:
Get some garlic and rub it all over a shallow baking pan. Put bacons all over the pan. Put some thick crusty bread on top of the bacons. Pour white wine all over this, until the bread is nice and damp, but not completely soggy. Then put some cheese like Gruyère over the top and put in a hot oven until the bacon is cooked.
